Walnut Chocolate Chip Pumpkin Cookies


Temperatures are cooling and fall is in the air. I couldn’t wait to make some walnut chocolate chip pumpkin cookies. These are so amazing that your non-vegan friends won’t be able to tell the difference.
Perfect treat for Halloween, Thanksgiving and Christmas.

Ingredients you will need for this recipe:
- Flour– Bob Mills Baking Flour
 - Organic Pumpkin Puree (do not use pumpkin pie filling)
 - Brown Sugar
 - Coconut Sugar
 - Vegan Dark Chocolate Chips
 - Vegan Butter (you can also substitute with coconut oil)
 - Walnuts
 - Baking Soda
 - Pumpkin Pie Spice
 - Cinnamon
 - Vanilla Extract
 - Salt
 

Walnut Chocolate Chip Pumpkin Cookies
Ingredients

 - 1 cup brown sugar packed tightly
 - 1/4 cup coconut sugar
 - 1/2 cup vegan butter softened
 - 1/2 cup pumpkin puree do not use pumpkin pie filling
 - 2 tsp vanilla extract
 - 2 cups organic all-purpose flour
 - 1 tsp baking soda
 - 1 tsp pumpkin pie spice
 - 1/2 tsp cinnamon
 - 1/2 tsp salt
 - 1 cup vegan chocolate chips
 - 1/2 cup walnuts chopped into small pieces

 - Preheat oven to 350℉. Line a cookie sheet with silpat non-stick silicone baking mat or parchment paper.

 - Add brown sugar, coconut sugar and vegan butter into mixing bowl. Cream the butter and sugar together for 1-2 minutes.

 - Add in pumpkin puree and vanilla extract. Cream til smooth and well blended.
 - Add in all-purpose flour, baking soda, pumpkin pie spice, cinnamon and salt into the bowl. Fold the ingredients into batter with a spatula and then turn mixer on for 1-2 minutes until all the ingredients are combined.

 - Mix in chocolate chips and walnuts with spatula.

 - Use ice cream scoop to make cookie dough balls and place on cookie sheet.

 - Bake cookies for 12-14 minutes on the middle rack of oven. When done baking, leave cookies on baking sheet to rest for 4-5 minutes before transferring cookies to cooling rack.
