Ingredients
  

  • Asian Peanut Quinoa Salad
  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Shredded red cabbage
  • 1 medium Carrot, grated
  • 1 medium Red bell pepper, diced
  • 1/4 cup Green onions, chopped
  • 1/4 cup Fresh cilantro, chopped
  • 1/4 cup Peanut butter
  • 2 tbsp Soy sauce or tamari
  • 2 tbsp Rice vinegar
  • 1 tbsp Maple syrup
  • 1 tbsp Sesame oil
  • 1 tbsp Water (if needed to thin dressing)

Instructions

  • 1) Rinse quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and let cool.
  • 2) In a large bowl, combine cooked quinoa, red cabbage, carrot, bell pepper, green onions, and cilantro.
  • 3) In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, and water if needed. Pour over salad and toss to coat.
