Ingredients
  

Greek Mediterranean Quinoa Salad

  • 1 cup Quinoa
  • 2 cups Water
  • 1 cup Cherry tomatoes, halved
  • 1 medium Red bell pepper, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Fresh basil, chopped
  • 1/4 cup Extra-virgin olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried Oregano
  • 1 pinch Salt & Pepper to taste

  • 1) Rinse quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and let cool.
  • 2) In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, olives, parsley, and basil.
  • 3) In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over salad and toss to coat
