Ingredients
  

  • Apple Walnut Quinoa Salad
  • 1 cup Quinoa
  • 2 cups Water
  • 1 medium Apple, diced
  • 1/2 cup Walnuts, chopped
  • 1/4 cup Dried cranberries
  • 1/4 cup Fresh parsley, chopped
  • 1/4 cup Fresh lemon juice
  • 2 tbsp Olive oil
  • 1 tbsp Maple syrup
  • 1 pinch Salt & Pepper to taste

Instructions
 

  • 1) Rinse quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and let cool.
  • 2) In a large bowl, combine cooked quinoa, apple, walnuts, cranberries, and parsley.
  • 3) In a small bowl, whisk together lemon juice, olive oil, maple syrup, salt, and pepper. Pour over salad and toss to coat.
