Ingredients
  

Dry Ingredients

  • 1 3/4 cups Whole wheat pastry flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt

Wet Ingredients

  • 3 large Ripe Bananas
  • 1/4 cup Pure Maple Syrup
  • 1 tbsp Chia Seeds
  • 1 tbsp Ground Flaxseed
  • 3 tbsp Warm water (to activate chia and flax)
  • 1 tsp Vanilla Extract
  • 1/4 cup Unsweetened Plant Milk (oat or almond)
  • 1/2 cup Chopped walnuts
  • 1/4 cup Vegan Chocolate Chips (optional)

Instructions
 

  • Preheat & Prep
    Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper for easy removal.
  • Mix the Chia-Flax Gel
    In a small bowl, mix chia seeds, flaxseed, and warm water. Let sit for 5–10 minutes until it forms a gel-like texture.

  • Mash the Bananas
    In a large bowl, mash the ripe bananas until mostly smooth. Leave a few small chunks for texture
  • Combine Wet Ingredients
    Add the chia-flax mixture, maple syrup, vanilla, and plant milk to the mashed bananas. Stir until well combined.
  • Add Dry Ingredients
    In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry mixture to the wet mixture, stirring just until combined. Avoid overmixing.
  • Fold in Walnuts
    Gently fold in the chopped walnuts (and chocolate chips or raisins if using).

  • Bake
    Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool & Enjoy
    Let the banana bread cool for 10 minutes in the pan, then transfer it to a wire rack to cool completely before slicing.
