Ingredients
  

  • 3 Cups Spinach or Kale (chopped)
  • 1/2 Cup Cooked Quinoa
  • 1/2 Avocado (sliced)
  • 1/2 Cup Blueberries
  • 1/2 Cup Rasberries
  • 1/4 Cup Walnuts
  • 2 Tbsp Pumpkin Seeds
  • 1 Tbsp Chia Seeds
  • 1 Small Chili Pepper, chopped small(optional)
  • Dressing (Oil Free Lemon Tahini)
  • 3 Tbsp Tahini
  • 3 Tbsp Fresh Lemon Juice
  • 2 Tsp Apple Cider Vinegar
  • 1 Tsp Maple Syrup
  • 1 Clove Garlic, minced
  • 1/2 Tsp Grated Fresh Ginger
  • 2-4 Tbsp Water
  • 1 Pinch Salt & Pepper to taste

Instructions
 

  • In a large bowl, combine spinach, quinoa, avocado, berries, walnuts, pumpkin seeds, chili (if using), and chia seeds.
  • In a jar, whisk tahini, lemon juice, vinegar, maple syrup, garlic, and ginger. Add water gradually until creamy.
  • Season with salt and pepper, then drizzle over the salad.
  • Toss gently and serve immediately.
