- 1 Cup Uncooked wild rice blend
- 1 Medium Yellow onion diced
- 3 Celery stalks, diced
- 3 Medium Carrots, diced
- 4 Cloves Garlic, minced
- 16 oz. Mushrooms, sliced (cremini, baby bella, or mixed mushrooms work best)
- 6 Cups Low-sodium vegetable broth
- 1 Cup Unsweetened Cashew Milk (or any plant milk)
- 1 Cup Unsweetened Cashew Cream (see below for quick recipe)
- 2 Tbsp Nutritional Yeast
- 1 Tsp Dried thyme
- 1 Tsp Dried rosemary
- 1 Bay Leaf
- 1 pinch Salt & Pepper to taste
- 2 Tbsp Fresh Parsley, chopped for garnish
- Cashew Cream
- 3/4 Cup Raw Cashews (soaked in hot water 20 minutes, then drained)
- 3/4 Cup Water
- 2 Tsp Lemon Juice
- 1 Pinch Salt
Blend until smooth and Creamy
