Vegan Holiday Spiced Cookies: A Taste of Christmas Cheer in Every Bite

These soft and chewy cookies are filled with cozy holiday flavors — cinnamon, nutmeg, and ginger — and drizzled with a sweet maple glaze. Perfect with a cup of hot cocoa or herbal tea. Completely vegan and dairy-free!

Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves

Wet Ingredients

  • 1/2 cup coconut sugar
  • 1/3 cup coconut oil, melted (or vegan butter)
  • 1/4 cup unsulphured molasses
  • 1/4 cup maple syrup
  • 2 tbsp plant-based milk
  • 1 tsp pure vanilla extract

Maple Glaze

  • 1/2 cup powdered sugar
  • 1 tbsp maple syrup
  • 1-2 tsp plant milk
  • Whisk until smooth and drizzle on cookies

Instructions
 

  • Preheat OvenPreheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry IngredientsIn a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
  • Combine Wet IngredientsIn a large bowl, whisk together melted coconut oil, sugar, molasses, maple syrup, milk, and vanilla until smooth and creamy.
  • Form the DoughGradually add the dry ingredients to the wet mixture. Stir until a soft dough forms. If too sticky, chill for 15 minutes.
  • Shape and BakeScoop 1½ tablespoon portions, roll into balls, and place 2 inches apart on the baking sheet.Flatten slightly with your hand or the back of a spoon.
    Bake for 10–12 minutes, until the edges are set and the centers look soft.
  • Cool CompletelyLet cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
  • Make Maple Glaze and drizzle onto cookies.
