Vegan Holiday Spiced Cookies: A Taste of Christmas Cheer in Every Bite

These soft and chewy cookies are filled with cozy holiday flavors — cinnamon, nutmeg, and ginger — and drizzled with a sweet maple glaze. Perfect with a cup of hot cocoa or herbal tea. Completely vegan and dairy-free!

Dry Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
Wet Ingredients
- 1/2 cup coconut sugar
- 1/3 cup coconut oil, melted (or vegan butter)
- 1/4 cup unsulphured molasses
- 1/4 cup maple syrup
- 2 tbsp plant-based milk
- 1 tsp pure vanilla extract
Maple Glaze
- 1/2 cup powdered sugar
- 1 tbsp maple syrup
- 1-2 tsp plant milk
- Whisk until smooth and drizzle on cookies
Preheat OvenPreheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Dry IngredientsIn a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
Combine Wet IngredientsIn a large bowl, whisk together melted coconut oil, sugar, molasses, maple syrup, milk, and vanilla until smooth and creamy.
Form the DoughGradually add the dry ingredients to the wet mixture. Stir until a soft dough forms. If too sticky, chill for 15 minutes.
Shape and BakeScoop 1½ tablespoon portions, roll into balls, and place 2 inches apart on the baking sheet.Flatten slightly with your hand or the back of a spoon.Bake for 10–12 minutes, until the edges are set and the centers look soft. Cool CompletelyLet cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
Make Maple Glaze and drizzle onto cookies.
