  • Avocado Quinoa Salad
  • 1 cup Quinoa
  • 2 cups Water
  • 1 medium Avocado, diced
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh cilantro, chopped
  • 1/4 cup Fresh lime juice
  • 2 tbsp Olive oil
  • 1 pinch Salt & Pepper to taste

Instructions
 

  • 1) Rinse quinoa under cold water. In a medium pot, combine quinoa and water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and let cool.
  • 2) In a large bowl, combine cooked quinoa, avocado, cherry tomatoes, cucumber, red onion, and cilantro.

  • 1 can Black Beans (15oz),rinsed and drained
  • 1 medium Mango, diced
  • 1 medium Red bell pepper, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh cilantro, chopped
  • 1/4 cup Fresh lime juice
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 pinch Salt & Pepper to taste
